VINIFICATION The grapes are harvested towards the end of September and after careful manual selection, they are softly pressed and left to ferment in horizontal macerators at a controlled temperature for 5-8 days. Maceration includes both pumping over and punching down for an accurate extraction of the noble components of the grapes.
AGING After racking, the wine is placed in steel tanks and then rests in the bottle for another 2 months.
